Allium cepa - Ed’s Red is a delicious, full-flavored shallot. FedCO seeds calls it "meaty". A larger shallot, the size of a small to medium storage onion, these have deep wine-colored skins that are nice and tight so that they store a very long time, up to a year with good conditions! Great for roasting, sautéing, and carmelizing. Good open-pollinated shallots are not easy to come by and this is a real treasure! Grown organically but not certified.
