Beta vulgaris. 30 days to baby greens, 55 to bunching greens.

A farmers market favorite, rainbow chard is a mix of green, red, orange, and yellow leaf types that make an attractive combination in salads or bunched on display. This seed comes from a large patch that unexpectedly overwintered in 2015-16. Cooks fast like spinach, great raw mixed into a salad. Plant densely and harvest as baby greens, or allow to grow to full size and harvest all summer and fall until the first major frost. If you're lucky and have mild winters, it will bounce back and give another good round of harvest in early spring before bolting in the second year.
